Letter To My College Self

Most of us couldn’t wait to get out of high school, i know i couldn’t! I knew i wanted to go to college and i knew i would love it because unlike high school i could pick a major i was interested in and i loved.

If your thinking about how to pay for college it is easier than you think, trust me. Student loans can help out a lot, you can also look into grants for your state. Don’t let the financial part disrupt the new journey and very exciting part of your life.

There was a few bumps in the road as with any college life. You have the best intentions of course but sometimes basketball games took priority over studying and an evening out with friends trumped sitting in the library for hours sipping on a Java Monster “Mean Bean” (these drinks were my best friend) crunching on cheddar goldfish.


If there is anything i could tell my college self it would be that life goes on no matter if you study for the test or hang out with the girls. It is important to soak up all i can while on campus, if it be English notes, learning to network, or strengthening people skills. It will be an experience that will not be forgotten, you’ll make lifelong friends that you consider family and you’ll also make a couple terrible decisions (to this day i can’t drink vodka). Your actions in these following years will help shape you into the person you were meant to become.

February Goals – Let’s Do This

I quit my full time job on December 31, 2016, i wanted to start working for myself the minute 2017 started. I was burned out, didn’t want to be body in a seat, i wanted to live my dreams not someone else’s.

I am trying to get everything together with the freelance writing business but until everything falls into place to help pay the bills i have decided to work with my aunt 2 days a week. Which really beats working 10+ hours from the full time I’d quit. I know it sounds crazy but my office has windows & they are so pretty and refreshing! The office i’d left had no windows just a door that was usually kept closed, blah.

I want to do more with Namaste And Eat Cupcakes too. I would like to reach out to do a few blog posts swapping. I am still learning a lot about blogging and it is so much fun, i love it.


Freelance Goals:
Make at least $100 worth of profit this month // I know that doesn’t sound like a lot but i have a lot to learn and i still need more experience.

Blogging Goals:
New posts to go up at least twice a week // I am looking at posts that do well traffic wise and i am wanting to do more recipes, lifestyle, health, and yoga posts.

Personal Goals:
Walk at least 10 miles a week // I felt so much better while i was out getting fresh air and moving.

Eating better // I have fallen off the wagon with processed foods and so many french fri’s. It is time to take back my body and health again.

Read // I would like to take out a little self time and finish at least 1 book. I have 3 more new books i can’t wait to crack open to get lost in.

Fruit Infused Water Combinations

I got myself the “Hello Sunshine” tumbler from Ashley Brooke Designs for Christmas and i love carrying it around with me, i get so many compliments on it.

I’m planning on making it my mission to stay hydrated. I really don’t like the taste of water so it can be a challenge, i found a solution though. Hello fruit infused waters! I’m obsessed with lemon water right now, it’s my thing (plus the lemon slices look pretty in my tumbler).

I love how i feel and how my skin looks when i am hydrated. I’m loving the lemon water because it helped me kick my caffeine habit, which i thought was impossible. The lemon water also helps alkaline the body while flushing out toxins.

If your like me and it’s hard to drown those 72oz’s of water down, then try my favorite fruit infused waters. They are really simple and can be adjusted to your taste buds.


Lemon infused water:
1. Place 2-3 thinly sliced lemons in a pitcher.
2. add 2 quarts of water.
3. Refrigerate 2 to 4 hours to allow the lemons to infuse

Watermelon infused water:
1. Cut 4 1inch thick slices of watermelon
2. add 2 quarts of water.
The watermelon is so refreshing there isn’t a need to let it sit in order to release the flavors. This is my favorite go to in the summer, you can also add a strawberry or mint leaves.

Cucumber infused water:
1. Slice a cleaned, peeled (or unpeeled depending on your preference) cucumber into 1/2 inch slices.
2. Combine cucumber slices in water.
3. Refrigerate 2 to 4 hours to allowing to infuse.

Orange & Vanilla infused water:
1. Slice 1 orange.
2. Add 2 liters of filtered water & 1/2 teaspoon vanilla extract.
3. Refrigerate 2 to 4 hours to allowing to infuse.
I know this infusion may sound a bit odd but i thought I’d give it a try. It was one of those days that i wanted a little sweet with citrus.

6 Ways To Take Care Of Yourself This Winter

Winter comes every year and it always likes to sneak up on most of us. We know it’s coming because the sun disappears way earlier than in the summer and then we might start feeling a little edgy because of lack of vitamin D. As you do in the summer you need to take care od yourself during the winter too. It’s important to your body and your overall health.

Instead of being a grump because the sun has decided to share with the moon you can do something about it! There are a few simple ways you can enjoy the winter without losing it and keeping your skin & mind healthy too. I can use to up a bottle of lotion a month during the winter months, my favorite is Aveeno. Anything with a lot of fragrance breaks me out in hives so Aveeno is my go to.


Skin health
The cold weather is terrible for your skin. It can dry it out leaving you with severely dry skin and even aggravate certain skin conditions such as eczema. Use moisturizers to help keep skin moist. To ensure extra care pick up supplements that contain garlic & vitamin E to help with blood circulation.

Goodnight sleep
A good 8 hours of sleep helps the body’s immune system healthy and fight off colds. There are a few ways you can fall asleep naturally, you could read a few chapters in a book or make out a list of things to do the next day. I love doing my nighy yoga routine. I sleep like a baby!

Eat well
I know when winter hits you want soups and comfort foods, I know this feeling all too well! You can still have these delicious things but in moderation. You can also try to find your favorite recipe in a lighter version. I love making breakfast easy for me, it is great when I don’t have to think about it, You can also try healthy breakfast ideas to get your day started without making you sluggish. You’ll want the foods with more vitamins and nutrients to be your friend during the winter, foods like winter fruits & veggies, mandarins, and bananas.

Wash your hands
This sounds like an odd reminder but germs are everywhere! Not just during winter but always. However, the nasty virus’ are out during the winter looking for YOU! Tell those germs you mean business and stock up on Bath & Body Works foaming hand soap when they have a sale. You can also add the little anti-bac packs to your arsenal too.

Watch your mood
While the days are shorter and there isn’t as much sunlight you’ll want to take a little extra time to ensure your health & try to stress less. Helping your nervous system will help destress you a ton! There are simple ways to do this, simply by taking a daily vitamin such as B vitamins (B1, B5, B6 and B12). Supplements containing herbs and nutrients such as echinacea, garlic, vitamin C, and zinc will help to support healthy immune function. You can also join a club, friendship helps counteract stress too.

Keep it movin’
The days are shorter and it is a little harder to focus and stay motivated, I get it. I totally understand. There is nothing I love more than sitting on the couch binge watching Netflix. However, just 30 minutes to an hour of movement a day is great to keep you in shape. You don’t have to have a gym membership, get a jump rope, walk through your neighborhood, turn to Pinterest for an in home workout.

Creamy White Chocolate Pistachio Cranberry Fudge

I have a confession to make, i have never ever in my life made fudge. Now, i am a little embarrassed! Who knew it was so easy!

Since making the first batch a week before Christmas, my family and friends have become full blown addicts! I have had to make 4 more batches of this fudge since. This fudge is the perfect balance of creamy, sweet, crunchy from the pistachios and tart from the cranberries. Your tastebuds will sing in harmony after you pop a piece in your mouth.

The recipe makes 64 pieces and trust me, some of you will be fighting over the last piece.


Ingredients
1 (14 oz) can sweetened condensed milk
3 cups (546g) white chocolate chips
1 teaspoon vanilla extract
⅛ teaspoon salt
1 cup (120g) dried cranberries
¾ cup (92g) shelled salted pistachios

Instructions
Line an 8-inch square baking dish with foil, leaving enough overhang on the sides to easily pull the fudge out once it is set. Set aside.

Combine the sweetened condensed milk and white chocolate chips in a medium saucepan over medium heat. Stirring constantly, cook until the white chocolate has melted completely and the mixture is smooth. It will be quite thick. Once smooth, remove from the heat and stir in the vanilla and salt. Then stir in the cranberries and pistachios until evenly combined. Pour into the prepared dish and smooth the surface with a rubber spatula.


Cover the fudge with foil and refrigerate for 4 hours, or leave at room temperature overnight. Once set, lift the fudge out of the dish using the foil overhang. Turn the fudge upside down to remove the foil, then turn right side up on a cutting board. Cut the fudge into 1-inch squares
